Bucatini Carbonara with Kale
This is what I make for dinner when I don’t know what to make for dinner and I haven’t done any grocery shopping. I usually have the ingredients lying around, the kids will eat it, there is enough left over for lunch the next day and hey, there is a green vegetable in it. I like to use bucatini, which is like spaghetti with a hole through the center- kind of like a straw. Can you use spaghetti instead? Yes, yes you can.

Ingredients

  • Salt
  • 2 tablespoons olive oil
  • 1 Tbs Butter
  • 3/4 cup chopped pepper bacon
  • 2 cloves garlic
  • 2 tbs chopped fresh parsley
  • 1 pound bucatini
  • 4 egg yolks
  • 1 cup grated Parmesan
  • I bunch kale, stems removed, finely chopped

Directions:

Boil a large pot of well salted water for the pasta

Heat the olive oil and butter over medium heat and cook the bacon until it starts to color and become crisp. Add garlic parsley and kale. Cook until Kale and garlic are soft. Turn off the heat and reserve.
Cook pasta according to directions

While the pasta is cooking, mix egg yolks in a bowl with the cheese.When pasta is just about ready, return the pan with the bacon to medium heat. Strain the pasta and toss in the pancetta to coat the pasta with the remaining fat in the skillet. Immediately vigorously stir the egg mixture into the pasta. Cook for 1 more minute and serve.
